Venison ravioli are a special and flavorful dish that is perfect for an elegant dinner. Here is a recipe to make venison ravioli from scratch:
Ingredients
For the ravioli dough:
- 200 g flour
- 200 g semolina flour
- 4 eggs
- 1 tbsp olive oil
- A pinch of salt
For the venison filling:
- 400 g venison, finely chopped
- 1 small onion, finely diced
- 1 clove of garlic, finely chopped
- 2 tbsp butter
- 2 tbsp cranberry
- 100 ml red wine
- 1 tsp fresh thyme, chopped
- Salt and freshly ground black pepper
- Optional: 50 g grated Parmesan
For the sauce:
- 100 g butter
- Fresh herbs of choice (e.g. sage, rosemary)
- Salt and pepper
Preparation of the dough:
Knead flour, eggs, oil, and a pinch of salt into a smooth dough.
Cover the dough and let it rest for about 30 minutes.
Filling:
Heat butter in a pan and sauté the onion and garlic.
Add the venison and cook until done.
Deglaze with red wine, add thyme, and season with salt and pepper.
Let the mixture simmer until almost all the liquid has evaporated. Then remove from heat and let cool.
Optionally mix Parmesan into the cooled meat filling.
Ravioli:
Roll out the dough thinly (best with a pasta machine).
Place small portions of the filling on one half of the dough.
Fold the other half of the dough over and press around the filling to form the ravioli. Shape with a ravioli cutter or a knife.
Cook the ravioli in boiling salted water for about 3-4 minutes until they rise to the surface.
Sauce:
Melt butter in a pan and add the fresh herbs.
Add the cooked ravioli directly to the pan with a slotted spoon.
Toss everything together so that the ravioli are coated with the butter-herb sauce.
To serve, arrange the ravioli on plates and optionally sprinkle with some freshly grated Parmesan.
Tips
Preparing venison: Ensure that the venison is very finely chopped to achieve a smooth filling.
Flavor variations: Experiment with different herbs and spices in the filling to create various flavors.
Vary the sauce: Instead of a simple butter-herb sauce, you can also try a creamy mushroom sauce or a red wine sauce as an accompaniment to the venison ravioli.
This dish is a wonderful example of how game meat can be used in fine dining, offering a rich and deep flavor that impresses on special occasions. Enjoy your meal!
