Bacon Dumplings
Preparation time: 50 min.
Ingredients:
- 250g bread cubes (preferably from the day before)
- 100g diced bacon
- 1 medium onion, finely chopped
- 4 eggs
- 1 tsp flour
- 100ml milk
- Salt, pepper
- Fresh parsley, finely chopped
- Chives, finely chopped
- Butter for frying
- Sauté onions and bacon: Heat some butter in a pan and sauté the finely chopped onions until they are golden yellow. Then add half of the diced bacon and fry everything together until the bacon is slightly crispy. Let the mixture cool down afterwards.
- Prepare bread mixture: Combine the bread cubes with the onion-bacon mixture, parsley, and part of the chives and flour in a large bowl. The remaining chives will be used later.
- Add liquid: Whisk the eggs with the milk and add salt, pepper, and a pinch of nutmeg. Pour the egg mixture over the bread mixture and mix everything gently to keep the dumpling mixture light; do not knead, just mix carefully. If the dumpling mixture is too dry, add a little milk; if it is too wet, add more bread cubes.
- Shape and cook dumplings: Form dumplings with slightly wet hands and cook them in gently simmering salted water until they rise to the surface (about 15-20 minutes).
- Serve: Serve the bacon dumplings with the remaining briefly sautéed bacon-chive mixture. A fresh salad or a hearty sauce makes an excellent side dish.
- Bacon dumplings with meat broth is a traditional dish in South Tyrol.
- The addition of onions brings an extra layer of flavor to the dish. Be careful not to sauté the onions too much to preserve a slight sweetness that perfectly complements the bacon.
- When frying the bacon, you can decide how crispy you like it. A slightly crispy texture is recommended as it provides a pleasant mouthfeel and enhances the flavor of the dumplings.
