- 3 eggs

- Gala or Elstar are ideal due to their sweetness and firmness, which remains during baking.
- Approx. 250 kcal per apple fritter (depending on size)
- Mix the batter: Mix flour and baking powder in a bowl. In another bowl, whisk eggs, milk, sugar, salt, lemon zest, and rum, then gradually stir in the flour mixture until a smooth batter forms.
- Prepare the apples: Peel, core, and slice the apples into 1 cm thick rings.
- Dip the apple rings: Dip the apple rings into the batter, ensuring they are completely covered.
- Fry: Heat oil in a pan and fry the apple rings until golden brown. Let them drain on kitchen paper.
- Serve: Dust with icing sugar and serve warm.
- A splash of rum in the batter gives the apple fritters a special touch.
- Lemon zest adds a fresh flavor note.
- When frying, make sure the oil is hot enough so that the apple fritters do not become too oily.
- For particularly fluffy apple fritters, Cook Peter recommends beating the egg whites separately and gently folding them into the batter. This small step gives the fritters an extra light and airy texture that delights with every bite.
