For the stuffing:

- 150 g chestnuts (cooked and roughly chopped)
- 150 g mixed nuts (e.g., walnuts and almonds, roughly chopped)
- 150 g bacon cubes (optional)
- 2 eggs
- 100 ml milk
- 1 tsp fresh thyme (chopped)
- 1 tsp fresh rosemary (chopped)
- 1 tsp fresh parsley (chopped)
- Salt and pepper from the mill
For the sauce:
- 1 l poultry stock
- 150 ml white wine (dry)
- 2 tbsp flour
- 2 tbsp butter
Preparation
1. Prepare the turkey
- Thoroughly rinse the turkey inside and out and pat dry with kitchen paper.
- Generously season inside and out with salt and pepper.
2. Prepare the stuffing
- Place the white bread in a large bowl.
- In a pan, sauté the onions, celery, and bacon cubes in a bit of oil until soft.
- Add the sautéed ingredients to the white bread.
- Add apples, chestnuts, nuts, herbs, eggs, and milk and mix everything well. Season with salt and pepper.
3. Stuff and prepare the turkey
- Loosely fill the turkey's cavity with the stuffing. Do not pack it too tightly, as the stuffing will expand during cooking.
- Close the opening with kitchen twine or toothpicks.
- Rub the turkey skin with the soft butter so that it becomes crispy and golden brown.
4. Roast the turkey
- Place the turkey in a large roasting pan and preheat the oven to 180 °C (conventional heat).
- Brush the turkey with a bit of oil and roast for approx. 3–3.5 hours.
- During the roasting time, regularly baste the turkey with the roasting juices to keep it juicy.
5. Prepare the sauce
- Deglaze the roasting juices from the pan with the white wine and poultry stock.
- Transfer the liquid to a pot, bring to a boil, and reduce by about a third.
- Melt the butter in a small pot, stir in the flour, and make a roux. Add this to the sauce and stir well until it thickens slightly. Season with salt and pepper.
6. Serve and present
- Let the turkey rest for about 15 minutes before carving, so the juices settle.
- Carve the turkey and serve the stuffing separately.
- Serve with the sauce and classic side dishes like mashed potatoes, Brussels sprouts, or cranberry sauce.
Pro Tips for the Perfect Turkey
- Use a meat thermometer:
The internal temperature of the turkey should be about 75 °C (measured at the thickest part). The stuffing should reach at least 70 °C. - Make the skin crispy:
Rub butter under the skin for particularly crispy results. - Do not overfill the stuffing:
The stuffing should be loose so that it cooks evenly. - Let it rest:
The turkey should rest after roasting to keep it juicy. - Alternative cooking method:
For particularly juicy meat, you can cover the turkey with aluminum foil and brown it without foil in the last 30 minutes.
Ingredient Knowledge: Ingredients in Focus
Turkey
- Origin and quality: Choose a turkey from sustainable or local farming. Fresh turkey has a particularly intense aroma.
- Meat: Turkey meat is lean, high in protein, and low in fat, making it a healthy choice for festive occasions.
Chestnuts
- Properties: Cooked chestnuts provide a slightly sweet, nutty note in the stuffing.
- Tip: Use pre-cooked chestnuts from vacuum packaging to save time.
White bread
- Function: White bread serves as the base for the stuffing and provides a soft, moist texture.
- Tip: Stale bread from the day before works particularly well.
Poultry stock
- Function: The stock forms the base of the sauce and gives it depth and flavor.
- Alternative: Homemade stock is the best choice, but high-quality store-bought stock is also an option.
What Can Go Wrong – and How to Fix It?
-
Meat is dry:
- Cause: The turkey was roasted for too long.
- Solution: Regularly baste with roasting juices and use a meat thermometer.
-
Stuffing is not cooked:
- Cause: Stuffed too tightly.
- Solution: Fill the stuffing loosely and check if it has reached at least 70 °C.
-
Skin is not crispy:
- Cause: Too little fat or too low temperature.
- Solution: Generously apply butter and increase the temperature in the last 30 minutes.
