Ingredients

  • 2 tbsp honey
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce or soy sauce
  • 1 tsp mustard
  • 3 cloves of garlic
  • ½ tsp paprika powder
  • ½ tsp Tabasco
  • Salt
  • Freshly ground pepper
  • 2 tbsp oil for grilling
  • 2 kg spare ribs
  • 100 g grilled corn slices
  • 80 g sautéed red onions
  • 4 sweet chili peppers, grilled
  • 4 sprigs of rosemary

Preparation

  1. Warm honey with tomato paste, Worcestershire sauce, and mustard briefly. Peel and finely chop the garlic and add it. Season with paprika powder, Tabasco, salt, and pepper. Brush the spare ribs with the honey marinade.
  2. Preheat the grill. Add oil to the grill. Grill the spare ribs slowly on one side over medium heat (180 degrees). Now turn the meat, brush with the marinade, and turn often. Continue grilling until the meat is crispy and separates from the bones – about 25 minutes, depending on the size of the spare ribs.
  3. Cut the spare ribs into pieces and arrange them with grilled corn, sautéed onions, chili peppers, and rosemary sprigs, and serve.
