Ingredients
- 250 g spaghetti
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves of garlic, finely chopped
- 400 g chopped tomatoes or 4-5 fresh tomatoes, diced (canned peeled tomatoes also work)
- 1 tsp sugar (optional, to balance the acidity of the tomatoes)
- Salt and pepper to taste
- 1 tsp dried oregano, basil leaves cut into strips
- Parmesan cheese for serving (optional)
Preparation
- Bring a large pot of water to a boil, add salt, and cook the spaghetti according to the package instructions until al dente. Drain and set aside.
- In a large pan, heat the olive oil over medium heat. Add the chopped onion and sauté until golden. Add sugar and garlic, briefly sauté. Then add the tomato paste and slowly stir together with the chopped onions over low heat. Add the tomato cubes or the canned tomatoes.
- Bring the tomato sauce to a boil, then reduce the heat. Let the sauce simmer on low heat for about 15-20 minutes, stirring occasionally, until it thickens and the flavors are well combined. Then season with fresh basil, oregano, salt, and pepper. Finally, stir in a bit of butter.
- Add the cooked spaghetti to the pan with the tomato sauce and gently mix so the noodles are well coated with the sauce.
- Distribute the spaghetti onto plates and garnish with fresh basil and Parmesan cheese as desired.
