Wurst salad is not an ordinary salad – it is a piece of tavern culture, a true summer classic, and a dish that tastes of beer gardens, sociability, and enjoyment.
Whether in South Tyrol, Tyrol, or Bavaria: Each region has its own variant – here comes the combination of tradition, freshness, and perfect taste.
🧂 Ingredients for 4 servings
Base:

400 g sausage or Regensburger (alternatively Lyoner or Extrawurst)

150 g Emmental or mountain cheese

1 red onion

4 pickles

8 radishes (optional for color and freshness)
Marinade:

4 tbsp white wine vinegar

2 tbsp mustard (medium hot)

6 tbsp sunflower or rapeseed oil

1 tsp sugar

Salt, pepper, pinch of paprika powder

2 tbsp pickle juice (from the jar)

1 tsp chives (freshly chopped)

1 tsp parsley (chopped)
For refining:

2 boiled eggs (cut into wedges)

1 tbsp capers (optional)

Fresh garden herbs (e.g. chives, dill, chervil)

Preparation:
Cut the sausage and cheese into fine strips.
Grate the onion into thin rings, slice the pickles and radishes into fine pieces. -
Mix the marinade:
Thoroughly mix vinegar, mustard, sugar, salt, pepper, and pickle juice, then slowly add the oil until a shiny emulsion forms.
Refine with chives and parsley. -
Combine everything:
Add sausage, cheese, onions, pickles, and radishes to a large bowl, pour over the marinade, and mix well.
Let sit for at least 30 minutes to allow all the flavors to meld. -
Serve:
Decorate the salad with egg wedges, fresh herbs, and optionally a few capers.
Crispy farmhouse bread or pretzels go well with it – and of course a cold beer 🍺.
