Press dumplings with gray cheese

A traditional recipe that perfectly combines the hearty flavors of gray cheese with the soft interior of a dumpling. Served in a robust meat broth or alongside a colorful leaf salad, these press dumplings make a delicious side dish or main course.

Ingredients for 8 dumplings:

  • Dumplings:
  • 150 g dumpling bread
  • 100 g sliceable gray cheese
  • 80 ml milk
  • 20 ml cream
  • 2 eggs, beaten
  • 1 tsp parsley, chopped
  • 1 tbsp flour
  • 20 g butter
  • Salt and pepper to taste

Preparation:

1. Prepare the dumpling mixture:
· Place the dumpling bread and flour in a bowl and mix.
· Warm the milk and cream in a pot, let about 30 g of gray cheese melt in it, then remove from heat to cool slightly.
· Pour the milk-cheese mixture over the dumpling bread.
· Cut the remaining 50 g of gray cheese into small cubes and add to the dumpling bread.
· Add the beaten eggs, chopped parsley, salt, and pepper, and gently mix everything into a homogeneous mass.
· Let the mixture rest for about 15 minutes to allow the liquid to be absorbed well.
2. Shape and fry the dumplings:
· With wet hands, shape small, round dumplings from the mixture and flatten them slightly.
· Heat butter in a pan and fry the dumplings until golden brown on both sides.
3. Cook the dumplings:
· In the meantime, bring a large pot of salted water to a boil.
· Carefully add the fried dumplings to the boiling water and simmer gently for 7–8 minutes.

  • In meat broth: Serve the cooked press dumplings in a deep bowl with hot meat broth.
  • With leaf salad: Arrange a colorful leaf salad as a side, drizzle with a light dressing, and serve the press dumplings alongside.
  • With steamed white cabbage: Place white cabbage on the plate, lay the press dumplings on top, sprinkle with Parmesan, and drizzle with brown butter. It's very delicious.
These press dumplings with gray cheese are a delicious way to enjoy a piece of alpine cuisine. The combination of the spicy gray cheese and the gentle consistency of the dumplings makes this dish a true delight.
