Prepare Dough:
Mix the rye flour, wheat flour, and grated Paarlbrot in a bowl. Add the eggs, water, and a pinch of salt, and knead well until the dough is smooth. Let the dough rest for 30 minutes.
- Heat some butter in a pan and sauté the diced apples and onions until soft. Let cool.
- Mix egg yolks with quark, cream, apple-onion mixture, and chives. Season with salt and pepper.
- Roll out the dough thinly with a pasta machine and cut out round shapes about 7 cm in diameter. Place filling in the center of the dough sheets using a spoon or piping bag. Fold the dough pieces over the filling (crescent shape) and press the edges well to ensure they are sealed.
- The Schlutzkrapfen should be crescent-shaped.
- Bring water to a boil in a large pot and lightly salt it.
- Carefully add the Schlutzkrapfen to the boiling water and cook for about 5-7 minutes until they rise to the surface.
- Remove with a slotted spoon and let drain.
- Fry the bacon strips until crispy and set aside.
- In another pan, heat some butter until it becomes lightly brown.
- Fry the Schlutzkrapfen in the brown butter until they are lightly golden brown.
- Sprinkle the crispy bacon strips over the Schlutzkrapfen.
- Optional: Crumble Graukäse on top.
- Garnish with fresh chives.
Personal Recommendation: These Schlutzkrapfen are a delicious combination of savory and sweet flavors. The crispy bacon strips and brown butter add an extra layer of taste. The Graukäse is a special highlight if you're brave enough to try it. Enjoy these Schlutzkrapfen as a main dish or as an appetizer, and share them with your loved ones!
