Ingredients

  • 100g flour
  • 2 eggs
  • 250ml milk
  • 1 pinch of salt
  • 200g cherry tomatoes
  • 100g arugula
  • 150g cream cheese
  • 100g yogurt
  • 1 tbsp lemon juice
  • 2 tbsp sweet chili sauce
  • 50g Parmesan
  • 2 tbsp olive oil
  • Salt
  • Pepper

Preparation

  1. Mix flour, eggs, milk, and a pinch of salt into a smooth batter. In a pan with a little olive oil, bake thin Palatschinken and keep warm.
  2. Quarter the cherry tomatoes and marinate with olive oil, sweet chili sauce, salt, and pepper. Wash and dry the arugula. Whip the cream cheese until smooth.
  3. Spread the cream cheese on the Palatschinken, distribute the marinated cherry tomatoes and arugula on top. Roll up the Palatschinken and cut into approximately 6 cm pieces.
  4. Mix yogurt with lemon juice, salt, and pepper until smooth.
  5. Spread the yogurt sauce on plates, place the Palatschinken rolls on top. Drizzle with sweet chili sauce, garnish with arugula and Parmesan.
