Original Tyrolean goulash soup like from the Alps. With tender beef, onions, bell peppers and marjoram. Hearty recipe for Tyrolean home-style cooking.
- 500 g beef (e.g. shoulder or hip), cut into cubes
- 2 medium onions, finely chopped
- 2 cloves of garlic, finely chopped
- 2 tbsp vegetable oil
- 2 tbsp tomato paste
- 2 tbsp paprika powder (sweet)
- 1 tsp caraway seeds
- 1 tsp marjoram
- 1/2 tsp hot paprika powder (optional)
- 1 liter beef broth
- 2-3 medium potatoes, diced
- Salt and pepper to taste
- 1 red bell pepper, diced (optional)
- Fresh parsley for garnish

Sear the meat: Heat the oil in a large pot. Add the beef and sear until browned all over. Remove the meat from the pot and set aside.

Sauté onions and garlic: In the same pot, sauté the onions and garlic until soft and lightly golden.

Add spices: Add the tomato paste, paprika powder, caraway seeds and marjoram and stir well. Let it cook for a few minutes.

Add meat and broth: Return the seared meat to the pot. Pour in the beef broth and bring the soup to a boil.

Let simmer: Reduce the heat and let the soup simmer for about 1 hour until the meat is almost tender.

Add potatoes and bell pepper: Add the diced potatoes (and diced bell pepper, if using) and let the soup simmer for another 20-30 minutes until the potatoes are soft.

Season: Season the soup with salt, pepper and optionally some hot paprika powder.

Serve: Garnish the goulash soup with fresh parsley and serve hot.
