Calories & Effort

  • Calories per serving: approx. 320 kcal
  • Preparation time: approx. 40 minutes
  • Cooking time: approx. 15 minutes
  • Total time: approx. 55 minutes

Ingredients for 4 people

For the dumplings:

  • 400 g starchy potatoes
  • 1 egg yolk
  • 1 tbsp melted butter
  • 40 g fenugreek flour (alternatively: carob seed flour)
  • 100 g flour
  • Salt
  • 1 pinch of nutmeg, freshly grated

For the filling:

  • 100 g mountain cheese, cut into small cubes

For serving:

  • 30 g Parmesan, grated
  • 2 tbsp chives, finely chopped
  • 40 g brown butter (for drizzling)

Preparation

1. Prepare the potatoes

  • Cook the potatoes in salted water, peel them, and press them through a potato ricer while still warm. Let cool.

2. Make the dough

  • Mix the pressed potatoes with the egg yolk, melted butter, fenugreek flour, flour, a pinch of salt, and the grated nutmeg to form a smooth dough. The dough should be soft but not sticky.

3. Shape the dumplings

  • Divide the dough into small portions on a lightly floured work surface. Shape each portion into a ball, flatten it, and fill with a cube of mountain cheese. Carefully seal the dough and shape into dumplings.

4. Cook the dumplings

  • Let the filled dumplings simmer in lightly boiling salted water for about 5–7 minutes, until they rise to the surface. Then remove with a slotted spoon and let drain well.

5. Serve

  • Arrange the dumplings on plates, drizzle with brown butter, and sprinkle with grated Parmesan and finely chopped chives.

Why fenugreek flour?

Fenugreek flour gives the dumplings a nutty, aromatic note and ensures a slightly fluffy consistency. Combined with the strong mountain cheese, it creates an intense flavor experience that pairs perfectly with the savory butter and Parmesan.

Tip

  • For a special touch, the brown butter can be flavored with fresh sage.
  • The dumplings also make an excellent side dish for meat dishes or salads.

A hearty, aromatic dish that delights with strong flavors and a wonderfully creamy filling!

5 Tips from the Pro for Perfect Fenugreek Dumplings

  1. Choose the right potatoes:
Starchy potatoes like Adretta or Agria are ideal for the dumplings, as they have a dry, starchy consistency after cooking that prevents the dough from being sticky.

  2. Don't over-knead the dough:
The potato dough should only be kneaded until it just holds together. Over-kneading makes the dough tough and heavy.

  3. Choose the right cheese:
Mountain cheese is ideal for this recipe, but you can also use other flavorful cheeses like Gruyère or Appenzeller if you want a different flavor note.

  4. Correct water temperature:
The water for cooking the dumplings should not be boiling but only lightly simmering. Too much boiling could cause the dumplings to fall apart.

  5. Flavor the brown butter:
Add extra flavor to the butter by warming it with sage, thyme, or a hint of garlic. This provides a finer aroma and perfectly complements the savory cheese filling.

Decoration Tips for Perfect Presentation

  1. Parmesan shavings instead of grated cheese:
Place thin shavings of Parmesan decoratively on the dumplings – it looks elegant and provides a great texture when eating.

  2. Color accents with herbs:
Sprinkle fresh chives or chopped parsley generously over the dumplings. For a special touch, arugula leaves also make a great garnish.

  3. Edible flowers:
Decorate the plate with edible flowers like nasturtium or borage. They add an elegant, colorful note to the dish.

  4. Crunchy finish:
Sprinkle roasted pine nuts or chopped walnuts over the dumplings to give the dish a crunchy texture.

  5. Serve modern:
Arrange the dumplings on a large, flat plate with a mirror of brown butter. Add small dollops of crème fraîche or sour cream in between and garnish with fresh herbs.

With these tips and creative decoration ideas, you will elevate your fenugreek dumplings to the next level and create a dish that impresses both in taste and appearance!
