1 red onion
-
2 garlic cloves
-
3 tbsp olive oil
-
2 tomatoes (peeled, diced or 150 g from a can)
-
1 tsp fresh thyme
-
Salt, pepper, a little sugar
For the fried potatoes:
-
600 g waxy potatoes
-
2 tbsp clarified butter or oil
-
1 small onion, finely diced
-
Salt, pepper, nutmeg
For the basil pesto:
-
1 bunch of basil
-
30 g pine nuts (toasted)
-
1 garlic clove
-
50 ml olive oil
-
30 g Parmesan, freshly grated
-
Salt, pepper
For garnishing:
-
Fresh dill sprigs
-
Optional: lemon zest, flowers, basil leaves
Preparation step by step:
Step 1: Prepare the potatoes
Peel the potatoes, cut into cubes, briefly boil in water until still crunchy. Set aside.
Step 2: Prepare the ratatouille vegetables
Wash the vegetables and cut into small cubes. Heat olive oil in a pan, sauté onion and garlic. Then add zucchini, eggplant, and bell peppers and cook over medium heat for about 10 minutes. Add tomatoes, season with thyme, salt, pepper, and a pinch of sugar. Let simmer for another 10 minutes. Finally, add a little tomato sauce.
Pro tip: Ratatouille tastes best when it is slightly reduced and seasoned aromatic.
Step 3: Fry the potatoes
Heat clarified butter in a large pan, fry potato cubes until golden brown, then add onion cubes. Season with salt, pepper, and a little nutmeg. Keep warm.
Step 4: Prepare the pesto
Finely chop all ingredients in a blender or with a hand blender. Add a little more oil if necessary. Season to taste.
Step 5: Fry the red mullet fillets
Drizzle fillets with lemon juice, season with salt and pepper. Fry skin side down in olive oil until crispy (about 3-4 minutes), turn and briefly finish cooking.
Pro tip: Red mullet is very delicate and needs only a short cooking time. Do not fry too long, otherwise they will become dry.
Step 6: Plate & Garnish
Arrange ratatouille in the center of plates, place fried potatoes on the side. Set fish fillets on top of the vegetables. Drizzle with basil pesto and garnish with dill sprigs, lemon zest, and fresh basil.
Serving & Decoration Tips:
-
Serve on pre-warmed plates.
-
Especially nice: Small flowers (e.g., borage or nasturtium) as a color contrast.
-
A glass of well-chilled Sauvignon Blanc or a light rosé pairs well.

Product knowledge: Red mullet & Ratatouille
Red mullet (Mullus surmuletus): Noble Mediterranean fish with firm, aromatic flesh. Very popular in French and Mediterranean cuisine. Contains a lot of protein, little fat, rich in omega-3 fatty acids.
Ratatouille: Classic vegetable dish from Provence. Made from zucchini, eggplants, bell peppers, tomatoes, and spices. Traditionally simmered slowly.
History & Tradition
Ratatouille originates from southern France and was once cooked as "poor people's food." Today it is a culinary specialty. The combination with fish brings Mediterranean lightness to the plate.
Avoiding & Correcting Mistakes:
-
Fish dry? Fried too long → Shorter cooking time, best skin side first.
-
Vegetables too soft or too hard? Cut into small cubes, cook evenly, possibly pre-fry individual vegetables.
-
Pesto bitter? Do not use bitter olive oil and do not blend basil too long.
Storage & Shelf Life
-
Fish fillets are best consumed fresh.
-
Ratatouille and fried potatoes: airtight refrigerated for 1-2 days.
-
Pesto: In a jar covered with oil up to 1 week in the refrigerator.
When to serve? What goes well with it?
-
Perfect for summer evenings, garden parties, or a Mediterranean dinner.
-
Side dish idea: Also delicious with wild rice, polenta, or ciabatta.

-
