Farmer‘s mush with honey and spiced oranges – a South Tyrolean classic reinterpreted. Creamy, sweet and refined with spicy orange syrup – simply heavenly!

Ingredients for 6 servings

For the Bauernmuas:

  • 7.5 tbsp butter (with quality seal South Tyrol)
  • 1.5 l milk (with quality seal South Tyrol)
  • 1 pinch of salt
  • 525 ml water
  • 255 g spelt whole grain flour
  • 150 g forest honey (with quality seal South Tyrol)

For the spiced oranges:

  • 3 oranges
  • 150 g cane sugar
  • 1.5 cinnamon sticks
  • 3 cloves
  • 1.5 star anise

Preparation

1. Prepare flour mixture

  • Mix half of the milk (750 ml), 60 ml water, and the spelt whole grain flour in a bowl until smooth. Ensure no lumps form.

2. Heat butter and milk

  • Melt 3 tbsp butter in a large pan or pot. Deglaze with 240 ml water and let simmer on medium heat.
  • Add the remaining milk (750 ml) and honey. Season with a pinch of salt and bring the mixture to a boil.

3. Incorporate flour mixture

  • Slowly add the prepared flour mixture to the hot milk mixture while continuously stirring with a whisk. Stir carefully to avoid lumps.
  • Continue stirring the mixture on low heat for about 15 minutes until it thickens and becomes creamy. Then fold in 4.5 tbsp of butter and let the Bauernmuas steam for a few minutes.

4. Prepare spiced oranges

  • Peel the oranges, segment them, and squeeze the remaining juice from the oranges into a bowl.
  • Caramelize the cane sugar in a pan. Deglaze with the orange juice and 225 ml water and bring to a boil over medium heat.
  • Add cinnamon sticks, cloves, and star anise and reduce the mixture until it becomes slightly thick.

5. Serve

  • Portion the warm Bauernmuas into bowls or plates. Place the orange segments on top and drizzle with the reduced spiced syrup.
