Calories, Effort & Difficulty Level

  • Calories per piece (about 30 pieces): approx. 100 kcal
  • Preparation time: approx. 30 minutes
  • Total time: approx. 2 hours (including cooling time)
  • Difficulty level: Easy

Ingredients

For the chocolate mixture:

  • 200 g dark chocolate (high quality, at least 70% cocoa content)
  • 100 g milk chocolate
  • 100 g white chocolate
  • 80 g salted pistachios (shelled)
  • 80 g dates (pitted and finely chopped)
  • 50 g almonds (roasted and coarsely chopped)
  • 1 tsp rose water (optional, for an oriental touch)

For decoration:

  • 1 pinch of edible gold powder or gold leaf (optional)
  • 30 g chopped pistachios
  • 30 g finely chopped dates

Preparation

1. Prepare ingredients

  1. Coarsely chop the pistachios, finely chop the dates, and lightly roast the almonds in a pan without fat until fragrant.
  2. Coarsely chop the chocolate varieties to facilitate even melting.

2. Melt and refine chocolate

  1. Melt the dark and milk chocolate in a heat-resistant bowl over a hot water bath (not boiling). Stir regularly until a smooth mixture forms.
  2. Melt the white chocolate separately in a second bowl.
  3. Stir the rose water into the dark milk chocolate to achieve a subtle oriental flavor.

3. Incorporate ingredients

  1. Fold the pistachios, dates, and almonds into the dark milk chocolate mixture until evenly distributed.
  2. Pour the mixture into a baking paper-lined mold (approx. 20 x 20 cm) and smooth the top.
  3. Drizzle the white chocolate in thin lines over the mixture and lightly marble with a fork or wooden stick.

4. Decorate and let cool

  1. Evenly distribute the chopped pistachios, dates, and edible gold powder or gold leaf over the surface.
  2. Place the mold in the refrigerator for at least 1 hour until the chocolate is completely set.

5. Cut and serve

  1. Carefully remove the set chocolate from the mold and cut it into small rectangles or diamonds with a sharp knife.
  2. Arrange the pieces on a nice plate or present them wrapped in cellophane as a gift.

Storage

  • Durability: Dubai chocolate can be stored in an airtight container for up to 3 weeks.
  • Tip: Store the chocolate in a cool, dry place, but not in the refrigerator to avoid condensation and loss of shine.

Pro Tips for Perfect Dubai Chocolate

  1. High-quality ingredients:
Choose premium chocolate and fresh nuts for the best flavor.
  2. Tempering:
To keep the chocolate shiny and crisp, melt it slowly and do not overheat.
  3. Individual variations:
Add additional oriental flavors like cardamom, cinnamon, or orange blossom water to vary the Dubai chocolate.
  4. Fine texture:
For a smoother surface, carefully smooth the mixture with a silicone spatula before cooling.
  5. Presentation:
Decorate with edible gold for a luxurious touch – ideal as a gift.

Ingredient Knowledge: Ingredients in Focus

Pistachios

  • Properties: They give the chocolate a nutty, slightly salty note and provide a crunchy bite.
  • Tip: Make sure to use unshelled and freshly roasted pistachios.

Dates

  • Function: Dates bring a natural sweetness and complement the chocolate with their characteristic oriental aroma.
  • Tip: Medjool dates are particularly juicy and flavorful.

Rose Water

  • Special features: It gives the chocolate a floral note that is typical of many oriental desserts.
  • Tip: Dose carefully, as rose water is very intense.

What can go wrong – and how to fix it?

  1. Chocolate does not set:

    • Cause: Too much liquid or not cooled sufficiently.
    • Solution: Gently reheat the mixture, let it set, and cool sufficiently.
  2. Ingredients sink to the bottom:

    • Cause: The chocolate mixture was too warm.
    • Solution: Allow the mixture to cool slightly before stirring in the ingredients.
  3. Marbling does not work:

    • Cause: The layers were not processed quickly enough.
    • Solution: Prepare both chocolates simultaneously and work quickly.
