This clear detox essence made from spring vegetables comes from the light Tyrolean cuisine. It cleanses, strengthens, and invigorates – perfect for days when you want to do something good for your body. With fresh carrots, celery, tomatoes, and bell peppers, a fine vegetable broth is created that delivers pure energy warm or lukewarm.
Ingredients for 4 people:
– 600 ml water
– 250 g fresh, cleaned, and peeled vegetables (e.g. carrots, celery, tomato, bell pepper)
– a pinch of sea salt
– 1–2 tbsp Pomme D’OR (clear apple vinegar or high-quality fruit vinegar)
– celery leaves for garnish
Preparation:
-
Bring water to a boil in a pot.
-
Add the washed, peeled vegetables.
-
Season with a pinch of sea salt.
-
Let simmer on low heat for 50 minutes, just below the boiling point.
-
Strain through a fine sieve.
-
Refine with Pomme D’OR.
-
Serve in small glasses or espresso cups.
Pro Tip:
Use only young spring vegetables – they contain many secondary plant substances and are particularly mild. The essence also tastes great served cold from a carafe. Ideal after sauna, training, or as a detox intermezzo in the menu.
Product Knowledge:
Carrots provide beta-carotene and promote skin regeneration. Celery has a diuretic effect and supports digestion. Tomatoes contain lycopene, a powerful antioxidant. Bell peppers provide plenty of vitamin C. This combination strengthens metabolism and ensures natural relief.
Serving Suggestion:
Serve the essence in pre-warmed glasses with some celery leaves. Alternatively, serve cold with ice cubes made from vegetable broth and a splash of lemon juice – as a detox drink in summer.
Storage:
Keeps in the refrigerator for 3 days.
Frozen for up to 2 months.
To reheat, warm slowly over low heat.
