🛒 Ingredient List

Vegetables:

  • 40 g onions, diced

  • 30 g garlic cloves (about 6 pieces), peeled

Other:

  • 20 g butter

  • 125 ml dry white wine

  • 500 ml clear broth (vegetable or meat-based)

  • 200 ml cream

Seasoning & Refinement:

  • 1 tbsp white wine vinegar

  • Salt, freshly ground

  • Pepper, freshly ground

  • 1 tbsp cold butter (for mixing)

  • 1 tbsp fried garlic slices (for decoration)

  • 1 tbsp fresh parsley, finely chopped

🧑‍🍳 Preparation Step by Step

1. Sauté onions

Melt butter in a pot and sauté the diced onions until translucent.

👉 Pro tip: Do not let them brown – just make them translucent! This gives a fine, sweet note.

2. Deglaze with white wine

Add the white wine and let the liquid reduce almost completely over medium heat.

👉 Avoid mistakes: Adding the next ingredients too early = no intense aroma!

3. Add garlic & broth

Add the garlic cloves, pour in the broth, and bring to a boil. Then stir in the cream.

👉 Decoration tip: Fry a few slices of garlic beforehand – this adds crunch and aroma when serving!

4. Reduce

Let the soup reduce to about ⅔ of its volume – this makes it nice and creamy and intense.

5. Blend

Transfer the soup to a blender or puree it with an immersion blender. Mix in cold butter – for a silky consistency.

👉 Pro tip: For even more creaminess, simply blend in half a pre-cooked starchy potato. This adds more binding – completely without starch or flour.
👉 Fine-tuning: If the soup becomes too thick, simply adjust the consistency with a little extra broth or cream.

6. Season & Serve

Season with white wine vinegar, salt, and pepper. Serve in bowls, garnished with fried garlic slices & parsley.

👉 Serving tip: Toasted bread slices, cheese crackers, or a glass of Riesling pair well with this.

  • In the fridge: Stored airtight, the soup lasts 2–3 days.

  • Freezing: Possible – but freeze without cream! Stir in fresh cream when reheating.

  • Reheating: Heat slowly over medium heat, do not boil – otherwise, the cream will curdle.
