Baked Camembert in a Zucchini Coat with Radicchio and Cranberry Jelly

Servings: 4

Calories per serving: approx. 400 kcal

Effort: Medium, approx. 35 minutes preparation time

Ingredients:

  • 4 small Camemberts
  • 2 zucchinis
  • 1 head of radicchio
  • 4 tablespoons cranberry jelly
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon honey
  • 2 tablespoons balsamic vinegar
  • Fresh herbs for garnish (e.g. thyme, rosemary)

Steps:

Prepare Camembert: Take the Camembert out of the refrigerator and let it come to room temperature. Cut the zucchini into thin slices.

Pro tip: Slice the zucchini thin enough to easily wrap around the Camembert, but not too thin to tear.

Zucchini Coat: Briefly blanch the zucchini slices in boiling water, drain, and wrap them around the Camembert.

Pro tip: Spread the zucchini slices on a kitchen towel and let them dry before wrapping them around the cheese. This prevents the coat from becoming too wet.

Bake Camembert: Place the wrapped Camembert in a pan with a little olive oil and sauté over medium heat until the zucchini coat is lightly browned.

Pro tip: Use a non-stick pan to prevent sticking, and turn the Camembert carefully.

Prepare Radicchio: Cut the radicchio into fine strips, marinate with honey and balsamic vinegar. Season with salt and pepper.

Pro tip: Briefly soak the radicchio in ice water to soften the bitterness before marinating.

Serve Cranberry Jelly: Lightly warm the cranberry jelly and serve it in a small bowl or directly on the plate.

Pro tip: Lightly warm the cranberry jelly for a more fluid consistency that spreads better on the plate.

Plate and Decorate: Arrange the Camembert on a plate, garnish with radicchio and cranberry jelly. Decorate with fresh herbs.

Pro tip: Use edible flowers or fresh herbs like thyme or rosemary for an appealing decoration.

5 Top Tips for the Perfect Baked Camembert:

  • Use high-quality Camembert for a creamy and rich flavor experience.
  • Carefully wrap the Camembert in zucchini slices to ensure an even coat.
  • Experiment with different herbs in the zucchini coat, such as thyme or basil, for added flavors.
  • Serve the dish immediately after it comes out of the pan to enjoy the best consistency of the melted cheese.
  • Pair the dish with a glass of dry white wine, such as a South Tyrolean Chardonnay, to complement the flavors.

Product Knowledge: Camembert, Zucchini, Radicchio, Cranberries

Camembert: A soft, creamy cheese made from cow's milk, originally from Normandy, France. The white noble mold gives it its characteristic flavor and texture.

Serving Tips and Decoration:

Serve the baked Camembert in a zucchini coat on a large plate, surrounded by the marinated radicchio strips. The cranberry jelly can be placed beside it or served in small bowls.
