Bacon and sausage products from South Tyrol

South Tyrolean Speck is a mildly smoked raw ham that has been aged for at least 22 weeks. In the Northern Alps, ham is preserved by smoking, in southern Italy by air-drying – the South Tyroleans have combined both methods, resulting in the wonderfully tasty and far beyond its borders known "South Tyrolean Speck"! Also popular is the so-called "South Tyrolean Farmhouse Speck", which is made from pigs raised on small-scale farms and fed with special fodder. Farmhouse Speck is a particularly tender bacon that also uses other parts of the animal.
