Ingredients for 4 people
For the Panna Cotta:
- 3 sheets of gelatin
- 200 g apples (e.g. Jonagold or Elstar)
- 50 g sugar
- ½ lemon (juice)
- 200 ml cream
- 100 ml milk
For garnishing:
- Fresh strawberries
- Pomegranate seeds
- Kumquats, thinly sliced
- Mint leaves
Preparation
1. Prepare gelatin
- Soak gelatin in cold water and let it swell for 5–10 minutes.
2. Prepare apples
- Peel, core, and cut the apples into small pieces. Place them in a pot with the sugar and lemon juice and cook over medium heat for about 10 minutes until soft.
- Puree the mixture finely and let it cool slightly.
3. Heat cream-milk mixture
- Slowly heat the cream and milk in a small pot, but do not boil. Remove from heat and dissolve the squeezed gelatin in it until completely melted.
4. Incorporate apple puree
- Stir the apple puree into the cream-milk mixture and mix well.
5. Fill and cool
- Fill the mixture into molds or glasses and let it set in the refrigerator for at least 4 hours, preferably overnight.
6. Serve
- Carefully unmold the Panna Cotta from the molds or serve directly in the glasses. Decorate with fresh strawberries, pomegranate seeds, kumquat slices, and mint leaves.
